BAKED CHICKEN BREASTS with CHEESE
A tasty comfort food dish. Great for family dinners.
SERVES 4
INGREDIENTS
1 small onion, chopped
500 g tomatoes, peeled and chopped (or 1 x 400g tin tomatoes)
400 g fresh mushrooms, sliced
4 chicken breasts fillets about 125 g each
Pepper and Salt
Ground Paprika
150 ml chicken stock
2 tbsp skim milk powder
250g mozzarella, sliced
Fresh basil leaves
METHOD
Preheat oven to 225° C. Sprinkle chicken breasts with pepper. Coat an oven proof dish with oil.
In a frypan heat 2 tbsp oil and cook chicken breasts over a medium high heat for 2 minutes each side to brown. Remove chicken from pan and place aside. Sprinkle with paprika and a little salt.
In the same frypan add onion and mushrooms cook for about 2 - 3 minutes. Add combined stock and milk powder. Lower heat and cook gently for 5 minutes. Remove from heat. Add tomatoes and basil and stir. Season to taste.
Place mixture in oven-proof pan. On top of the mixture, place the chicken breasts. Cut mozzarella into slices and place slices on top of chicken breasts. Drip some olive oil on top. Bake in lower part of oven at 200° for 20 minutes.
Serve with steamed greens.
