CLASSIC MINESTRONE

The perfect winter warmer. Serves 4.

INGREDIENTS

  • 1 tsp olive oil

  • 1 brown onion, diced

  • 1 medium carrot, diced

  • 2 celery stalks, diced

  • 1 garlic clove, crushed

  • 1 tbsp chilli sauce

  • 1 medium sweet potato, peeled and diced

  • 400g can crushed tomatoes

  • 3 cups chicken stock (or vegetable stock)

  • 3 cups water

  • 75g pasta (shells or elbows)

  • 100g green beans, chopped

  • ¼ cup chopped parsley

METHOD

  1. Heat oil in a large saucepan over medium heat. Add onion, carrot and celery, cook for 6 minutes, stirring occasionally until tender. Add a little water if necessary.

  2. Add garlic, chilli sauce and sweet potato, cook for 1 minute. Add tomatoes and stock and bring to the boil.

  3. Add pasta and cook for 10 minutes. Add green beans and cook for 5 minutes.

  4. Season with pepper and top with parsley.
