TRADITIONAL COTTAGE PIE
Hearty nutritious comfort food. Serves 4
INGREDIENTS
1 tsp olive oil
1 onion, finely chopped
1 carrot diced
1 celery stick, diced
150g button mushrooms. diced
500g lean beef mince
400g can brown lentils, rinsed and drained
1/2 cup frozen peas
2 tbsp tomato paste
1 tbsp Worcestershire sauce
2 tsp soy sauce
1 1/2 cups beef stock
4-6 potatoes, peeled and quartered
1 tbsp butter
1/4 cup reduced -fat milk
METHOD
Preheat oven to 180°C. Heat oil in a large deep fry pan over medium to high heat. Add onion, carrot, celery and mushrooms and cook for 8 minutes or until tender.
Add mince and cook for 6 minutes or until browned.
Add lentils, tomato past, sauces and stock and simmer for 15-20 minutes.
Meanwhile, boil potatoes until tender. Drain well. Add butter and milk and mash until smooth.
Transfer mince to a large casserole dish. Top with potato and rough up with a fork.
Bake for 20 minutes or until golden on top.
