ONE POT CHICKEN FAJITA PASTA
A flavoursome and quick nutritious dinner.
SERVES 4
INGREDIENTS
600g chicken breast, diced
2 Tbsp olive oil
30g fajita seasoning
1 red onion, sliced
200g capsicum, sliced
baby spinach
100g lite cream cheese
320g pasta (dry weight)
METHOD
Add 2 tablespoons of olive oil to a large skillet over medium high heat. Add chicken, and cook, stirring occasionally, until seared on all sides.
Add 15g of fajita seasoning and stir to ensure chicken is evenly coated.
Add onion, capsicum, and remaining 15g of seasoning and mix until combined.
Meanwhile, cook pasta as per packet instructions.
Over a low heat, mix in lite cream cheese and a splash of pasta water. Stir to combine.
When pasta is cooked, add drained pasta and spinach to skillet. Mix until combined and creamy.
Top with parsley and parmesan.
