ZUCCHINI SLICE
Delight in every bite with this easy, cheesy, zucchini slice!
SERVES 4
INGREDIENTS
3 zucchinis, grated
1 carrot, grated
1 C self-raising flour
3 bacon rashers, diced
6 eggs, lightly beaten
1 1/2 C light cheese, grated
1 onion, diced large
2 tsp olive oil
1 pinch salt and pepper *to taste
METHOD
Preheat oven to 200C/180C fan forced. Grease and line a 20 x 30cm slice pan with baking paper.
Heat the 2tsp oil in a small frying pan over high heat. Add bacon and onion and cook, stirring often, for 7 minutes or until bacon is crisp and onion is soft. Set aside to cool slightly.
Use a fork to whisk the eggs in a large bowl until combined. Add flour and baking powder and mix until smooth. Add zucchini, cheese, and bacon mixture. Stir to combine.
Pour mixture into the prepared pan and bake for 30 minutes or slice is golden and set.
Let slice cool slightly before slicing. Serve with salad.
* This recipe can be made gluten free by substituting flour for gluten free self-raising flour.
